I added goat cheese, cilantro and pumpkin seeds to this recipe to help compliment the creamy texture of the sweet potatoes, add a little kick, as well as an extra crunch. Sweet Potato, Avocado, Gut Friendly Ice Cream

Who says ice cream can’t be gut healthy? During the summer I always crave ice cream, however dairy and my stomach just don’t get along. Luckily there are so many great dairy alternatives like almond milk or coconut milk that are more easily digestible and have added health benefits, so you no longer have to say good bye to your favorite ice cream treat or feel guilty for loading up on sugar. Living a healthy lifestyle doesn’t mean sacrificing the foods you love. It simply means educating yourself on how you can incorporate healthy foods into your diet while also feeling satisfied. I am currently following Be Well By Kelly’s Fab 4 meal plan where you aim to incorporate fat, protein, fiber and greens in every meal, so I tried to stick to that motto when creating this ice cream. There is zero guilt involved when consuming this ice cream because it is loaded with healthy ingredients, good fat, and whole foods that will make you feel satisfied with every bite! I also used Further Foods Collagen Peptides for added gut benefits and glowing skin!

What is collagen, you may ask? Collagen is the protein found in your skin and connective tissue, and can be consumed from foods like bone broth and meat. When our body is low on collagen our skin can become “saggy”, our nails become brittle, and many people experience stomach and digestion issues. I have always been one to struggle with bloating, poor digestion and dry skin as a result from my hypothyroidism, so collagen has been a huge benefit for my overall health. Since I have started taking collagen daily, my hair is shinier, my nails grow uncontrollably, and my gut and digestion have healed. Do you ever wonder why some people just have a “glow” to their skin? It is because they are eating a healthy diet and consuming foods high in collagen to give them that youthful glow. I live in Minnesota and have struggled with dry skin during the winter months for years, and this was the first year that my skin felt smooth and youthful, even when the below zero temperatures rolled in.

One of my favorite things about collagen is you can literally put it in anything and not taste it. I have a picky husband who definitely notices when I try to “hide” vegetables in his meal, but he has never noticed the extra collagen peptides I load into his morning smoothie! I put collagen in my morning coffee, smoothies, oatmeal, baked goods, even soup! When that “3:00 pm slump” comes along I sometimes make a turmeric latte and add my Further Foods collagen peptides for a boost of protein. Heck, you can even put it in a glass of water if you don’t have time to get creative.

Coconut Flour Grain Free Crackers

A common question from my husband is if we have “those delicious crackers” and I always respond to him “no” because if we bought them at the rate he ate them, we would be broke!! The delicious crackers I am referring to are Simple Mills of course. So I decided to make them myself and and they are delicious! The best part about these crackers is they are guilt-free, loaded with healthy fat, and tons of seasoning. Because they are homemade, there aren’t any hidden preservatives or fillers, so you can feel good about eating a clean cracker and top with hummus, avocado, or crumble on your favorite salad. Recipe below:

Ingredients:

  • 3/4 cup coconut flour (I prefer Bob’s Redmill)
  • 1/3 cup melted coconut oil
  • 2 T fresh rosemary
  • 1 T Everything But Bagel seasoning from Trader Joes
  • 2 T Further Foods Collagen Powder (Use my code LOVEURGUT10 for 10% off!)
  • 1 tsp. sea salt
  • 1 egg (cage free/hormone & antibiotic free)
  • 1 T fresh garlic
  • 1 cup water

Directions

  1. Preheat the oven to 450 degrees F
  2. Place all dry ingredients in a bowl and mix well
  3. Add in the egg, water, melted coconut oil and fresh garlic and stir well
  4. Place in a non-stick pan. For a crispier cracker, make sure you spread the dough thin
  5. Place in the oven for 25 – 30 minutes
  6. After the batter is golden brown, turn your oven on broil for 5 + minutes to crisp the edges of the crackers
  7. Cut into small squares and dip in your favorite homemade hummus! Enjoy ๐Ÿ™‚

Gluten Free Banana Nut Oatmeal Muffins

I am the first one to admit that I am OBSESSED with grocery shopping. There is something about walking up and down the food isles, searching for sales, and looking for the best new staples I can find. One area I always tend to get a little carried away with is the fruit isle. The apples, oranges, berries and bananas always look so fresh and tasty so I insist on stocking my pantry with them. But like any perishable food, I never manage to eat them all in time and they go bad. The great thing about fruit is that typically the riper they get, the sweeter they taste. You can put any ripe fruit in your food processor to make a tasty fruit spread, yogurt parfait topping, or in this case, muffins. As you all know, the best banana bread calls for the bananas right before you feel like you need to throw them away.

However, when it comes to your gut, it is important to limit the amount of sugar you indulge in during the day. Like I mentioned in previous posts, candida (the bad gut bacteria) feeds off of sugar, often times even the natural sugar you find in fruit. So I always try to limit one fruit to my diet a day. Everyone is different so just because I only eat one fruit a day doesn’t mean you have to follow those guidelines as well. The important thing is to listen to your body and understand what it needs and how it reacts to certain foods.

I hope you enjoy these easy, healthy, and “indulgent” banana nut muffins. They are perfect for a breakfast on-the-go, or an afternoon snack. For an extra kick I would recommend adding chocolate chips or topping it off with some natural nut butter. Here is how to make them:

Ingredients:ย

  • 2 very ripe bananas
  • Two cups of gluten free oatmeal (I used Bob’s Redmill)
  • 2 tsp cinnamon (a great natural sweetener that boosts your metabolism and doesn’t affect your glycemic index)
  • 1 egg (grass fed, organic)
  • 1 cup almonds
  • 2 Tbs. almond butter
  • 2 tsp. vanilla
  • 1 tsp. baking powder
  • Optional: Dark Chocolate chips or dates for extra sweetness

Directions:

  1. Preheat your oven to 350 degrees F
  2. In your food processor, combine all ingredients (leave out chocolate chips if you use them)
  3. Blend the mixture until creamy and the oatmeal is smooth
  4. Grease a muffin tin with avocado or coconut oil
  5. Add the chocolate chips to the mixture if needed
  6. Add 1/4- 1/3 cup scoop (or whatever size you want them to be) into each muffin holder
  7. Place pan in the oven for 12 – 15 minutes until cooked all the way
  8. Once they are cool, top with your favorite nut butter
  9. That’s it!! So easy! Enjoy ๐Ÿ™‚
