Gluten Free Cauliflower “Tostadas”

Ingredients for the Tostada:

  • 1 cup black beans
  • 1 cup riced cauliflower
  • 1/2 cup egg whites
  • 2 tsp. minced garlic
  • 1/2 cup salsa verde (I recommend Trader Joe’s brand)

Ingredients for the Sauce:

  • 1/2 cup greek yogurt
  • 1/2 cup Salsa verde
  • 1/2 avocado

Toppings:

  • Shredded chicken
  • Avocado
  • Salsa
  • Cilantro

 

Directions for the Tostadas:

  1. Place all ingredients in a food processor and blend until creamy
  2. Scoop out the mixture and create thin “pancakes” your non-stick pan on the stove top
  3. Make sure to make them thin so they get crunchy. Flip until thoroughly cooked

Directions for Sauce:

  1. While your tostadas are cooking on the stove, place all ingredients above in a bowl and stir together until creamy
  2. Place the sauce on the tostada once they are done and cooled

Directions for toppings:

  1. ***Before you begin, cook your chicken in a crockpot with 1/2 cup of salsa verde overnight so it is moist and shredded
  2. After you place the cream sauce on the tostada, place the shredded chicken, salsa, avocado, and cilantro on top
  3. Enjoy 🙂
