Clean Eating Turkey Squash Meatballs

Eating in social settings can sometimes be hard when you have specific eating “restrictions” to your diet. I love getting together with friends and having everyone bring an appetizer, because that way I can make sure I have something to eat and I can try a new recipe on others that hopefully they will enjoy! These clean eating turkey squash meatballs are definitely a crowd-pleaser, and you don’t even have to tell your guests that they fit within the “gluten free/dairy free” category. Just because you eat a certain way doesn’t mean you have to define yourself that way. As long as you have clean, real, and wholesome ingredients in front you of, you will never have to feel like you are restricted from what you are putting into your mouth. Ingredients For Meatballs:

  • 1 pound of organic, hormone-free ground turkey (I get mine from Costco)
  • 1/2 a small squash – cooked
  • 1/2 cup almonds
  • 1/2 cup goat cheese
  • A small handful of cilantro
  • One avocado
  • 1 tsp. turmeric 
  • 1 tsp. garlic
  • A pinch of sea salt

Ingredients for Sauce:

  • 1 cup plain greek yogurt
  • 1/2 cup salsa verde (I highly recommend Trader Joe’s Brand)
  • 1 avocado
  • 1 tsp. garlic salt
  • 1 tsp. sea salt    

Directions For Meatballs:

  1. Bake your squash beforehand with olive oil and sea salt in the oven
  2. Put everything listed above in your food processor
  3. Blend on high until smooth
  4. Your oven should still be preheated from your squash at 350 degrees
  5. Scoop out your meatballs and place them on a baking sheet with parchment paper or a non-stick pan
  6. Place in the oven for 25 minutes
  7. Enjoy 🙂

Directions for Sauce:

  1. Place all of the ingredients in a small mixing bowl and stir together until blended evenly
  2. Once your meatballs are out of the oven and cooled, drizzle the sauce on your meatballs and have extra on the side for dipping!
